INGREDIENTS
Main Ingredients- 2 cups rolled oats
- ½ cup Biobali Almond Butter
- ¼ cup maple syrup
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- 2 tbsp ground flaxseed
- 2 tbsp chia seeds
- ¼ tsp sea salt
- ¼ cup chopped almonds
Optional Add-ins
- ¼ cup dried cranberries
- ¼ cup dark chocolate chips
- 2 tbsp pumpkin seeds
- 2 tbsp shredded coconut
Equipment
- Large mixing bowl
- Small saucepan or microwave-safe bowl
- Square baking pan (8×8 inch)
- Parchment paper
- Spatula
- Sharp knife
INSTRUCTIONS
1. Prepare the Pan. Line an 8×8-inch (20×20 cm) square baking pan or container with parchment paper, leaving a slight overhang on the sides. This will make it easier to lift the oat bars out after chilling and ensure clean, even slices.
2. Warm the Wet Ingredients. In a small saucepan over low heat, or in a microwave-safe bowl, gently warm the Biobali Almond Butter, maple syrup, and melted coconut oil until the mixture becomes smooth and pourable. Stir continuously to prevent overheating. Remove from the heat and stir in the vanilla extract until fully incorporated.
3. Combine the Dry Ingredients. In a large mixing bowl, combine the rolled oats, ground flaxseed, chia seeds, sea salt, and chopped almonds. Stir well to evenly distribute the ingredients, ensuring every bite contains a balance of oats, seeds, and crunchy almonds.
4. Mix Everything Together. Pour the warm almond butter mixture over the dry ingredients. Using a spatula or sturdy wooden spoon, gently fold everything together until the oats are evenly coated and the mixture becomes slightly sticky. If using optional add-ins such as dried cranberries, dark chocolate chips, pumpkin seeds, or shredded coconut, fold them in at this stage until evenly distributed.
5. Press into the Pan. Transfer the mixture into the prepared baking pan. Using the back of a spatula, spoon, or your hands lightly dampened with water, firmly press the mixture into an even layer approximately 1 inch (2.5 cm) thick. Take extra time to compact the mixture well, especially around the edges and corners, as this helps the bars hold together after slicing.
6. Chill Until Firm. Cover the pan with plastic wrap or a lid and refrigerate for at least 1–2 hours, or until the mixture is completely firm. For an even firmer texture and cleaner slices, chill overnight. Proper chilling allows the almond butter and maple syrup to bind the ingredients together naturally.
7. Slice the Bars. Once fully chilled, lift the mixture out of the pan using the parchment paper overhang. Place it on a cutting board and use a sharp knife to cut into evenly sized rectangular or square bars. Wipe the knife clean between cuts for neat, professional-looking edges.
8. Serve and Store. Enjoy the Almond Butter Oat Bars straight from the refrigerator or allow them to sit at room temperature for a few minutes for a softer bite. Store the bars in an airtight container in the refrigerator for up to one week, or freeze for up to one month. They make an ideal grab-and-go breakfast, post-workout snack, or healthy afternoon treat.
