INGREDIENTS

Main Ingredients

  • 1 cup rolled oats
  • 3 tbsp Biobali Peanut Butter Smooth
  • 8 Medjool dates (pitted)
  • 2 tbsp ground flaxseed
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened shredded coconut
  • Pinch of sea salt
  • 1–2 tbsp water (if needed for blending)

Optional Coating

  • Unsweetened shredded coconut
  • Crushed roasted peanuts
  • Biobali Ceremonial Cacao powder
  • Chia seeds

Equipment

  • Food processor
  • Mixing bowl
  • Measuring spoons
  • Baking tray or plate
  • Airtight container

INSTRUCTIONS

1.  Prepare the Ingredients. Gather all of your ingredients before starting. If the Medjool dates feel firm or dry, soak them in warm water for about 5 minutes, then drain thoroughly and pat dry. Soft dates will blend much more easily and help create a naturally sticky mixture without adding extra sweeteners.

2. Blend the Base. Place the rolled oats, soaked dates, ground flaxseed, chia seeds, vanilla extract, sea salt, and Biobali Peanut Butter Smooth into a food processor. Blend for about 1–2 minutes until the mixture becomes evenly combined and starts to clump together. The texture should remain slightly coarse with visible oat pieces rather than completely smooth.

3. Adjust the Consistency. Stop the food processor and check the mixture by pressing a small amount between your fingers. If it crumbles apart, add 1 tablespoon of water and blend again. Continue adding water gradually, only if needed, until the mixture holds together easily without becoming overly wet or sticky.

4. Shape the Energy Balls. Scoop approximately 1 tablespoon of the mixture using a cookie scoop or spoon. Roll it gently between your palms to form smooth, evenly sized balls about 1 inch (2.5 cm) in diameter. Repeat until all of the mixture has been used.

5. Add the Coating. Place the shredded coconut, crushed roasted peanuts, chia seeds, or Biobali Ceremonial Cacao powder into separate shallow bowls. Roll each energy ball in your preferred coating until evenly covered, gently pressing the coating onto the surface so it adheres well. You can also leave some energy balls plain for a simple, natural finish.

6. Chill Until Firm. Arrange the finished energy balls on a tray or plate lined with parchment paper, leaving a little space between each one. Refrigerate for at least 30 minutes to allow them to firm up and develop a chewy, satisfying texture. Chilling also makes them easier to handle and enhances their flavor.

7. Serve and Store. Enjoy the Peanut Butter Energy Balls straight from the refrigerator as a quick breakfast, pre-workout snack, or healthy afternoon treat. Store any leftovers in an airtight container in the refrigerator for up to one week, or freeze for up to one month. Simply thaw for a few minutes before serving if frozen.
