INGREDIENTS

Main Ingredients

  • 3 tbsp Biobali Rosella Jelly
  • ¼ cup chia seeds
  • 1 cup coconut milk (or your preferred plant-based milk)
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • ½ cup Greek yogurt or coconut yogurt
  • ¼ cup fresh strawberries, sliced
  • ¼ cup fresh blueberries

Optional Toppings

  • Granola
  • Sliced almonds
  • Unsweetened shredded coconut
  • Fresh mint leaves
  • Fresh raspberries
  • Additional Biobali Rosella Jelly for topping

Equipment

  • Medium mixing bowl
  • Whisk
  • Spoon
  • Measuring cups and spoons
  • 2 serving glasses or dessert jars
  • Refrigerator

INSTRUCTIONS

1.  Prepare the Chia Pudding Base. In a medium mixing bowl, combine the chia seeds, coconut milk, maple syrup (or honey), and vanilla extract. Whisk thoroughly for about 1 minute until the chia seeds are evenly distributed and no clumps remain.

2. Let the Chia Seeds Bloom. Allow the mixture to rest for 10 minutes, then whisk again to break up any chia seeds that have settled together. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, until the pudding becomes thick, creamy, and spoonable.

3. Prepare the Fresh Fruit. Wash and dry the strawberries and blueberries thoroughly. Slice the strawberries into thin pieces and leave the blueberries whole. If desired, chill the fruit beforehand for an extra refreshing dessert.

4. Prepare the Yogurt Layer. Spoon the Greek yogurt or coconut yogurt into a small bowl and stir until smooth. If you'd like a sweeter flavor, mix in a teaspoon of maple syrup or honey.

5. Assemble the First Layer. Spoon several tablespoons of the chilled chia pudding into the bottom of each serving glass. Smooth the surface gently with the back of a spoon to create an even base.

6. Add the Yogurt and Rosella Jelly. Carefully add a layer of yogurt over the chia pudding, followed by a generous spoonful of Biobali Rosella Jelly. Gently spread the jelly so it forms a vibrant, even layer without mixing into the yogurt.

7. Add the Fruit Layer. Arrange sliced strawberries and fresh blueberries over the Rosella Jelly. Their natural sweetness and bright color beautifully complement the floral, tangy notes of the jelly.

8. Finish the Dessert. Top with another small spoonful of Biobali Rosella Jelly, then sprinkle with granola, sliced almonds, or shredded coconut for added crunch. Garnish with fresh mint leaves and a few extra berries for a premium café-style presentation.

9. Chill Before Serving. Refrigerate the assembled pudding for 15–20 minutes before serving to allow the layers to settle and the flavors to blend together.

10. Serve and Enjoy. Serve chilled straight from the glass. Stir gently before eating if desired, or enjoy each layer separately to experience the creamy chia pudding, smooth yogurt, vibrant Biobali Rosella Jelly, and fresh fruit in every spoonful.
