INSTRUCTIONS

1.  Cook the Grain. Prepare the quinoa or brown rice according to the package instructions until tender and fluffy. Once cooked, fluff with a fork and allow it to cool slightly while preparing the remaining ingredients.

2. Roast the Vegetables. Preheat the oven to 400°F (200°C). Spread the diced sweet potato and broccoli florets evenly on a baking tray. Drizzle with a little olive oil and season lightly with salt and black pepper. Roast for 20–25 minutes, turning halfway through, until the vegetables are golden around the edges and tender in the center.

3. Prepare the Fresh Ingredients. Wash and dry the cucumber, cabbage, parsley, and any optional vegetables. Slice the cucumber into thin rounds, shred the purple cabbage if needed, and cut the avocado into neat slices just before assembling to maintain its fresh color.

4. Prepare the Chickpeas. If using canned chickpeas, rinse and drain them thoroughly. For extra texture, lightly season them with a pinch of paprika and roast them in the oven for the last 10 minutes alongside the vegetables until slightly crisp.

5. Make the Lemon-Herb Dressing. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, maple syrup (or honey), garlic powder, salt, and black pepper until the dressing is smooth and well emulsified. Taste and adjust the seasoning if desired.

6. Prepare the Sauerkraut. Spoon the Biobali Sauerkraut into a small bowl and gently separate the strands with a fork. Allow any excess brine to drain for a minute while keeping enough moisture to preserve its refreshing tangy flavor.

7. Assemble the Power Bowl. Spoon the warm quinoa or brown rice into a large serving bowl as the base. Arrange the roasted sweet potato, roasted broccoli, chickpeas, cucumber, shredded cabbage, avocado slices, and Biobali Sauerkraut in separate sections to create a colorful café-style presentation.

8. Add the Finishing Touches. Drizzle the lemon-herb dressing evenly over the bowl. Sprinkle with pumpkin seeds, chopped parsley, and any optional toppings such as sunflower seeds, sesame seeds, microgreens, or chili flakes to add extra crunch and freshness.

9. Serve Immediately. Serve while the roasted vegetables are still warm and the fresh vegetables remain crisp. Toss everything together just before eating so every bite combines the creamy avocado, hearty grains, roasted vegetables, and the bright, probiotic-rich flavor of Biobali Sauerkraut.
