INGREDIENTS

Main Ingredients

  • 8 Medjool dates
  • 4 tbsp Biobali Peanut Butter Smooth
  • 2 tbsp roasted peanuts, roughly chopped
  • 2 tbsp dark chocolate, melted (optional)
  • 1 tsp chia seeds

Optional Toppings

  • Crushed almonds
  • Toasted coconut flakes
  • Cacao nibs
  • Pumpkin seeds
  • Sea salt flakes
  • Dark chocolate shavings

Equipment

  • Small knife
  • Cutting board
  • Spoon or piping bag
  • Small microwave-safe bowl (for melting chocolate)
  • Serving plate

INSTRUCTIONS

1.  Prepare the Dates. Using a small sharp knife, carefully make a lengthwise slit down one side of each Medjool date without cutting all the way through. Gently open each date and remove the pit while keeping the date intact to form a natural pocket for the filling.

2. Prepare the Peanut Butter. If the Biobali Peanut Butter Smooth is thick, warm it in the microwave for 10–15 seconds or stir well until it reaches a smooth, spreadable consistency. This makes filling the dates much easier and creates a cleaner presentation.

3. Fill the Dates. Using a small spoon or piping bag, fill each date with approximately 1½ teaspoons of peanut butter. Avoid overfilling so the dates can still close slightly around the filling while leaving some peanut butter visible on top.

4. Add the Crunchy Toppings. Sprinkle the chopped roasted peanuts evenly over each stuffed date, gently pressing them into the peanut butter so they stay in place. If desired, add chia seeds, crushed almonds, pumpkin seeds, or cacao nibs for additional texture and nutrition.

5. Drizzle with Chocolate (Optional). Melt the dark chocolate in a microwave-safe bowl using 15-second intervals, stirring between each interval until smooth. Lightly drizzle the melted chocolate over the stuffed dates using a spoon or piping bag for an elegant finish.

6. Chill Before Serving. Arrange the stuffed dates on a serving plate or tray and refrigerate for 15–20 minutes. Chilling allows the peanut butter to firm up slightly and the chocolate to set, making the dates easier to handle and enhancing their texture.

7. Garnish and Serve. Just before serving, finish with a few flakes of sea salt or a sprinkle of toasted coconut if desired. Serve chilled or at room temperature as a naturally sweet snack, healthy dessert, or quick energy boost.

8. Store for Later. Store any leftovers in an airtight container in the refrigerator for up to one week. They can also be frozen for up to one month simply let them sit at room temperature for a few minutes before enjoying.
